Chocolate Cherry Muffins

3 cups oat flour (or whole wheat flour)
3/4 cup sugar
1/2 cup cocoa
4 tsp baking powder
2 tsp baking soda
shake of salt
1 1/3 cups fat-free yogurt (plain or vanilla)
1 cup milk
2 1/2 Tbsp cherry concentrate
1/2 cup pure maple syrup
1 tsp almond extract
3 Tbsp canola oil
1 cup chocolate chips

Makes 2 dozen muffins.
Mix together all dry ingredients.  Add the rest of the ingredients, stir just until moistened.  Grease muffin tins and fill 2/3 full.  Bake at 400 for 15-20 min.

Maple Buttermilk Cornbread
Mix in large bowl:
2 ½ cups buttermilk, 2 ½ tbsp. maple syrup, 2 eggs, 2 tbsp. canola oil.  Set aside.
Mix in small bowl:
2 cups whole wheat flour, 2 cups cornmeal, 2 tbsp. baking powder, ½ tsp. baking soda.  Add to liquids.
Melt 1 tbsp. butter in 13”x9” pan or spray pan with cooking spray.  Pour batter into pan.  Bake at 355 degrees for 20 min.
Maple Cream Cheese Bread
½ cup water (warm)
1 package yeast
¼ cup maple syrup
1 egg
3 tbsp. butter
2 tsp. cinnamon
2 ½ cups whole wheat flour
Maple cream
Filling:   16 ounces (2 packages) cream cheese, softened
                2 eggs
                1 tsp. vanilla extract
Blend together cream cheese and egg at room temperature; set aside.
Dissolve yeast in warm water.  Add syrup, egg, butter, cinnamon, and 1 cup flour, mix until smooth.  Stir in enough of remaining flour to make soft dough.  Turn out onto well-floured surface; knead about 2 minutes, until smooth.
Roll to 18x9”.  Cut 1/2” strips to 1/3 of center.  Fill with cream cheese filling.  Fold over strip.  Let rise at room temperature until doubled.  Bake 25 minutes in preheated 325 degree oven.  Frost with maple cream while still warm.

Maple Blueberry Muffins
1 egg
½ cup milk
½ cup maple syrup
1/4 cup canola oil
2 cups whole wheat flour
½ tsp. salt
3 tsp. baking powder
1 cup blueberries

Topping:    1/3 cup packed brown sugar
                      ½ tsp. cinnamon
                      1/3 cup finely chopped nuts (optional)
Beat egg and liquids with fork.  Add remaining ingredients and stir just until combined.  Do not over- mix.
Fill greased muffin cups 2/3 full.  Before baking, sprinkle with topping.  Bake at 375 degrees for 20-25 min.  Yield: 12 medium-size muffins.
